Here we have 5 delicious meals for under $30!! 

Pineapple Glazed Ham Dinner $6.46

Serve with Mac & Cheese and Asparagus

Ingredients:

  • 1 – 6 lb Bone In Ham
  • 2 – 8 oz cans pineapple rings, reserve juice
  • 3/4 cup brown sugar
  • 1/2 tsp ginger

Instructions:

  1. Preheat oven to 350 degrees.
  2. Place ham in roasting pan, arrange pineapple rings on ham. Pin them down with toothpicks if desired.
  3. Cover with foil.
  4. Bake for 1 1/2 hour.
  5. While ham is baking, mix pineapple juice, brown sugar and ginger until well combined.
  6. Remove ham from oven. Spread pineapple glaze evenly over ham.
  7. Bake an additional 30 minutes until glaze is set.

Pork Fried Rice $4.03

Ingredients:

  • 2 tbsp vegetable oil
  • 2 eggs, lightly beaten
  • 2 tbsp + ¼ tsp soy sauce
  • 1 clove garlic, minced
  • 1 tbsp fresh ginger, peeled and minced
  • 1 bunch of scallions, white and green parts separated and thinly sliced
  • ½ lb ground pork
  • 2 carrots, shredded
  • ½ cup frozen peas
  • 2 cups cooked white rice, ( about ¾ cup uncooked rice)
  • 2 tbsp rice vinegar

 Instructions:

  1. In a wok or large non-stick skillet, heat 1 tbsp oil over high heat. Meanwhile, in a small bowl, lightly beat eggs with ¼ tsp of soy sauce to combine. Add eggs to wok and swirl to coat bottom of pan. Cook without stirring until almost set, 1 minute, then fold in thirds with a spatula. Transfer eggs to a work surface and cut into ½ inch pieces.
  2. Add 1 tbsp oil to wok and swirl to coat. Add garlic, ginger, and scallion whites and cook stirring constantly, until fragrant, about 30 seconds. Add pork and cook, breaking up meat with a wooden spoon, until just cooked through, about 3 minutes. Add carrots, peas, and rice and stir to combine. Add cooked egg, 2 tbsp soy sauce, and vinegar, cook stirring constantly, until rice is coated, about one minute. Let cook undisturbed until warm, about one minute. Top with scallion greens and serve.

 Spring Chicken  $6.66

Ingredients:

  • 3 Tbsp flour
  • ½ tsp each salt and pepper
  • 1 lb chicken chicken breasts (2 breasts, split)
  • 2 Tbsp olive oil
  • 1 small red onion thinly sliced
  • 1 clove chopped garlic
  • ½ cup dry white wine
  • 1 cup chicken broth
  • 1 lb asparagus sliced on a diagonal
  • 1 cup frozen edamame, thawed
  • 2 Tbsp dill
  • 1 Tbsp sour cream
  • 1 Tbsp fresh lemon juice

Instructions

  1. In a shallow bowl mix flour, salt and pepper. Coat the chicken breasts in the flour mixture.
  2. Heat the oil in a large skillet over medium – high heat and cook the chicken breasts until golden brown on one side, 4-6 minutes. Turn the chicken, add the onion and garlic and cook, stirring the onion and garlic occasionally for 3 minutes.
  3. Add the wine to the skillet and simmer, scraping up any brown bits, until reduced by half, 1-2minutes.Add the broth, return to a boil, then reduce the heat and simmer until the chicken is cooked through. 5-6 minutes more.
  4. Two minutes before the chicken is done, add the asparagus and edamame to the skillet and cook, stirring occasionally, until just tender. Remove from heat and stir in the dill, sour cream and lemon juice. Serve with potatoes, pasta, or crusty bread if desired. This recipe is only 361 calories per serving!!!! Best of all it tastes good.

 Breakfast For Dinner – Ham, Potato and Egg Skillet With French Bread $4.42

Ingredients: 

  • 1/2 lb Red Potatoes, cubed
  • 2 Tblsp Vegetable Oil
  • 1/2 green pepper, chopped
  • 1/4 cup finely chopped onion
  • 1 lb diced ham
  • 6 Eggs
  • 1/2 Cup shredded cheese

Instructions: 

  1. Cook diced ham in large skillet until it starts to brown. Remove, set aside.
  2. Heat oil in large skillet. Add cubed potatoes. Cook until tender. About 10-15 minutes. Add green pepper & onion cook an additional 3 minutes, return diced ham to skillet.
  3. In a medium bowl, whisk eggs. Add to potato mixture and cook while stirring until eggs are cooked through.
  4. Sprinkle with cheese. Serve and enjoy!

 Baked Dijon Tilapia Fillets (frugalanticsrecipes) $7.65

Ingredients:

  • 2 lbs Tilapia Fillets
  • 1/4 cup butter, melted
  • 1 tsp onion powder
  • 2 tsp garlic powder
  • 1/2 tsp white pepper
  • 1 1/2 tsp dijon mustard
  • 1/2 tsp salt
  • 2 tsp dried parsley

Instructions:

  1. Place fillets in shallow baking dish
  2. Mix remaining ingredients in a small bowl
  3. Pour butter sauce over fish. It will harden from fish being cold.
  4. Bake at 350 degrees 25-30 minutes uncovered.
